Yes, this is what I started crying to people today as I realized that the bulk of what I’d eaten today was Süßigkeiten—sweets. Chocolate and cake in large amounts TASTE fantastic but they leave me feeling discombobulated and light-headed if they’re the only things I eat. Other problem: it is so much easier to reach for the chocolate than to cook a meal. And by meal I mean spaghetti, basil sauce and broccoli, or rice and lentils.
I should mention right here and now that I’ve done a whole lot of going to restaurants lately just so I don’t have to deal with cooking food.
So! In the interest of trying to scatter up some interest in cooking, what are you favorite meals? Do you have any favorite vegetarian meals? How about recipes? What would you do if you were vegetarian, hate cooking but had a fast metabolism and tended toward hypoglycemia? I’m all ears. And stomach.
Seeing as I live in the dorms, I don’t do much cooking yet…although that will change next year. I like dishes with past in them though, although most of the stuff I cook has meat in it…this should be interesting as my friend I’m planning on rooming with is vegetarian…If I were you, I would try and look for some cookbooks, although that might be hard in Austria….
I’m not vegetarian but almost all of my friends are…
I once made a Peanut-Ginger Tofu dish with spinach and mushrooms. That was really easy to make and really delicious.
Correct me if I’m wrong but aren’t you supposed to eat lots of protein if you’re hypoglycemic (even though it seems like sugar would be the answer)? If I were you, I’d make myself some kind of trail mix with lots of nuts, raisins, some chocolate (but no enough to make you sick), etc.
Fresh fruit is your friend. Also fresh carrots + dressing. I tend to go for stuff that I can just pop in a microwave like pierogies, veggie burgers, and frozen vegetables. These are really easy, as long as you have a microwave. Miso soup is another good one, or soup in general – tomato or vegetable soup comes in cans and tastes delicious, or you can make your own fairly simply. Trail mix is another good idea, or granola, which is easy to find. Oatmeal, too. Dunno how much this will help, just saying what I usually eat.
How about a baked potato? Do you eat cheese and other dairy products? That will add some protein. If you eat eggs, try an omelet, or even just some scrambled eggs with whole grain toast. Go for the whole grains when you can. Make brown rice to go with your lentils. Add in some vegetable broth for flavor. Saute up some mushrooms and onions to go on top of the lentils and rice. My 8-year-old daughter and I are vegetarians in a decidedly un-vegetarian place — Texas. Good luck!
